A gourmet-toast craze is officially coming to Long Island, and Woodbury is about to get its first taste of Toastique.
Toastique, the fast-casual café known for turning humble bread into an edible lifestyle choice, is opening at 8027 Jericho Turnpike in the Woodbury Country Square Shopping Center. A representative for the company said they’re targeting “the end of January, barring any construction delays,” because nothing says welcome to Long Island quite like waiting for permits.
The new shop will occupy the first space in the center, a storefront last home to Dugan’s Sandwich Shop, which has since relocated to Plainview. The new Toastique will sit between the Town of Oyster Bay Golf Course and Trail View State Park, practically daring golfers and hikers to refuel with something greener than a bagel with scallion cream cheese.

The chain, founded in 2018 by former cheerleader Brianna Keefe, has grown from a single Washington, D.C., café to more than 50 locations nationwide. The Woodbury shop marks only the third in New York State and will be run by husband-and-wife franchisees Chris and Andrea Pedersen, who bring a health-and-wellness-driven franchise background to the table.
Chris was born and raised in Queens, while Andrea grew up in Scottsdale, Arizona, though she’s long had roots on Long Island, as both of her parents are originally from Hicksville. The Woodbury Toastique will be the couple’s first venture in quick-serve dining, but they’re no strangers to franchising. Their experience spans brands including Massage Envy, Orangetheory Fitness, European Wax Center, and sugaringLA, making Toastique’s emphasis on fresh, clean ingredients a natural extension of the wellness-focused concepts they’ve always gravitated toward.
“We believe that when you eat good, you also feel good,” said Andrea Pedersen, adding that the location’s proximity to the park and golf course makes it a natural fit for an active community.
Toastique’s menu is built around fresh, locally sourced ingredients and includes its signature customizable toasts, Avocado Smash, Smoked Salmon, PB Crunch and more, plus smoothies with names like Blue Mystique and Superfruit. Smoothie bowls, cold-pressed juices (bottled or fresh-poured), and grab-and-go items round out a menu aimed at early risers, athletes, and anyone hopping between tee time, trail time or school drop-off.

Once the doors open this winter, Toastique Woodbury plans to operate daily from 7 a.m. to 5 p.m.
